Research Director, UC Davis Olive Center, University of California, Davis

  • Overseeing the fee-for-service operations at the Olive Center Chemistry Laboratory
  • Designing research projects aimed at sustainable and practical solutions
  • Initiating, leading, and organizing research projects with UC Davis faculty, government scientists, and industry leaders
  • Engaging the table olive and olive oil industries to identify technological challenges, and providing practical research solutions
  • Providing reliable scientific (in particular, chemical) information on olive oil and table olives to the scientific communities, industries and general public
  • Communicating with scientific experts to push the forefront of olives and olive oil research
  • Writing grant proposals, reports, and peer-reviewed scientific manuscripts
  • Working with the executive director to ensure that the research, outreach, and education programs of the Center are the highest quality
  • Providing research-based information that is accessible for the public on the Center’s website which currently averages 400 page visits per day
  • Mentoring graduate and undergraduate researchers working on olive- or olive oil-related projects

 

January 2011 – March 2012

Project Director, 2010 Technical Assistance for Specialty Crops (TASC), U.S. Department of Agriculture

  • Designed a project in which extra virgin olive oils produced in the U.S. are surveyed, including sample collection, chemical and sensory testing and report write-up
  • Responsible for communicating with olive oil producers in industry and olive oil testing laboratories
  • Co-workers: Patricia Darragh and Bruce Golino (Executive Director and member of the California Olive Oil Council)

 

January 2010 – September 2011       

Postdoctoral Researcher, Department of Food Science and Technology, University of California, Davis

  • Lead and set up laboratory for a project in collaboration with the UC Davis Olive center
  • Employed various analytical methods to study the chemical components and characteristics of both domestic and imported extra virgin olive oil
  • Managed, mentored and assisted undergraduate and graduate students regarding their individual research projects
  • Advisor: Prof. Charles F. Shoemaker

 

June 2010 – August 2010

Scientific Advisor and Author, 2009 Technical Assistance for Specialty Crops (TASC), U.S. Department of Agriculture

  • Compiled experimental data on 100 samples of U.S. olive oils from three different laboratories, analyzed this data and authored a detailed reported on the scientific findings.

Postdoctoral Researcher, Department of Viticulture and Enology, University of California, Davis

  • Used quantum mechanics to study the mechanism of the Fenton Reaction in wine
  • Assisted graduate students regarding their individual research projects
  • Advisor: Prof. Andrew L. Waterhouse

 

September 2003 – August 2008

Doctoral Researcher, Department of Chemistry, University of California, Davis

  • Used quantum mechanics to study the mechanisms of various organic and organometallic reactions
  • Performed synthetic reactions to verify computed results
  • Collaborated with many experimentalists to help elucidate reaction mechanisms and designed different substrates to achieve optimum product ratios
  • Set up a chemistry research laboratory and was in charge of laboratory safety
